So its no secret I’ve been a little MIA recently on here, to apologise for that i thought i would share the PERFECT, Easter Cream Egg Rocky Road Recipe. It’s really super simply to make and requires no baking just a couple of ingredients and a mixing bowl and a hob!
What you will need:
- 150g Unsalted Butter
- 250g Dark Chocolate
- 150g Milk Chocolate
- 4tbsp Golden Syrup
- 150g Digestive Biscuits
- 180g Marshmallows
- 8 Cream Eggs
- More for decoration (optional)
To start of with melt your butter in a bowl over a pan of water on the heat (low heat) once the butter is about half way melted add in the dark chocolate and allow that to melt together also add in the milk chocolate and the golden syrup, continue to stir the mixture until everything is melted and well combined. Once everything is mixed together remove it from the heat.
Next take the digestive biscuits and crush them up into crushed up bite sized pieces i do this by popping them into a plastic sealable food bag and using a rolling pin to crush them up. Once the mixture has cooled a little add in the crushed up digestive biscuits, the marshmallows and the cream eggs make sure everything is coated in chocolate! YUM!
Finally Line your baking tray with grease proof paper, i used a square tin but you can use whatever dish you have lying around and pore in your mixture then just pop it into the fridge to set! I left mine about 4-5 hours before finishing off by cutting a cream egg in half and fixing it on top to serve! (be careful when cutting your cream eggs in half those things are slippery and i ended up with a finger injury!)
