If you’ve been following my baking/desert recipes or you follow my Pinterest account, it should be no surprise to you how obsessed i am with Nutella. I love love love it! So i thought seeing as i enjoyed my Oreo Cheesecake so much and how much i love Nutella, i would make a Nutella Cheesecake!

What you will need:

  • 2 cups of Nutella
  • 180g of Cream cheese
  • 300ml of double cream
  • 3 tbsp of icing sugar
  • 250g of digestive biscuits
  • 2 tbsp of butter
  • a handful of chopped up hazelnuts

To start off with i made the biscuit base, i took the digestive biscuits popped them in a sealable food bag and just rolled over them with a rolling pin until they was all nice and crushed with no big chunks (they didn’t take long to do doing it this way!) Next i took the butter and melted it in the microwave making sure not to burn it, mix it in with the biscuits, then seeing as i decided to make a layered cheesecake split your biscuit mixture in half and press one half of mixture to the bottom of your cheesecake tin.

Moving on to the filling, take the Nutella, cream cheese & icing sugar and mix together with an electric mixer or whisk if you don’t have an electric mixer. In a separate bowl take the double cream and whip that up again either with a whisk or electric mixer until it doubles in volume once you’ve done that take your Nutella cream cheese mixture and fold it into your cream. As this is a layered cheesecake again take half of the mixture and pop it on top of the biscuit base already in the tin so you have a thin layer of the Nutella cream cheese mixture and pop that into the fridge or freezer for 20-30 minutes to set. Once it’s had a little while to set its time to move onto the next layers, and for that all you need to do is repeat the process again adding the rest of the biscuit mixture and finishing off with the rest of your Nutella cream cheese mixture. Once you’ve finished your layers pop it back into the fridge to set, i left mine over night just to be certain but it should be done after 4/5 hours in the fridge. Once you are ready to serve take a handful of hazelnuts, chop them up and sprinkle them over the top and you could also toast your hazelnuts if you wanted to and there you have it my no bake Nutella Cheesecake Recipe, you can change it up however you like keep it simple with 1 layer or go for it like i did and make it into a layered cheesecake!
