Strawberry & Cream Scones

It’s safe to say the GBBO & Pinterest (can’t ignore Pinterest) have given me a new interest in baking! I’ve always enjoyed watching the mixture of ingredients create something i find it fascinating, so i thought i would try making some Strawberry & Cream Scones!


  • 250g self-raising flour, plus more for dusting
  • ¼ tsp salt
  • 1 tsp baking powder
  • 40g butter, cut into cubes
  • 25g caster sugar
  • 100ml milk
  • 1 tsp vanilla extract
  • beaten egg, to glaze
  • jam, Strawberries and cream, to serve

To begin i preheated my oven to 220c and then greased my baking tray. I then took a large mixing bowl and added the flour, sugar, salt, baking powder and mixed, i also added the butter and rubbed it in with my fingers until it mix looked like fine crumbs. I then took the milk and added the vanilla extract and made a little well in the dry mix and added the liquid a little at a time and combined quickly with a butter knife, kneed together until you have a soft dough. Turn the dough onto a lightly floured surface and pat down until it’s about 1/2-3/4 inch in thickness. Taking a 5cm cutter, cut out as many scones as possible with the dough you have available and place them on your greased baking tray, then lightly brush the tops with a beaten egg. Pop the baking tray into the oven for 10-15 minutes until the scones have risen and the tops have turned golden, then all thats left is to decorate and serve however you fancy! I choose to serve mine with strawberry jam, strawberries & cream!
