I recently posted a recipe for my Strawberry & Cream Scones (i’ve linked those for you just incased you missed them!) I loved them soo much i decided to make some more, but this time adding fruit! I added glazed cherries and raisins which i thought was a really nice touch, so here’s how i made my Fruit Scones.


  • 250g self-raising flour, plus more for dusting
  • ¼ tsp salt
  • 1 tsp baking powder
  • 40g butter, cut into cubes
  • 25g caster sugar
  • 100ml milk
  • 1 tsp vanilla extract
  • fruit, i added glazed cherries & raisins
  • beaten egg, to glaze
  • Serve with/how you like

To begin i preheated my oven to 220c and then greased my baking tray. I then took a large mixing bowl and added the flour, sugar, salt, baking powder and mixed, i also added the butter and rubbed it in with my fingers until it mix looked like fine crumbs, just like the last time i made them. I then took the milk and added the vanilla extract and made a little well in the dry mix and added the liquid a little at a time and combined quickly with a butter knife, kneed together until you have a soft dough, at this point once my dough was formed i added the fruit, i choose glazed cherries & raisins but you can add whichever/whatever fruit you like or fancy, and make sure to mix that in well. Next turn the dough onto a lightly floured surface and pat down until it’s about 1/2-3/4 inch in thickness. Taking a 5cm cutter, cut out as many scones as possible with the dough you have available and place them on your greased baking tray, then lightly brush the tops with a beaten egg. Pop the baking tray into the oven for 10-15 minutes until the scones have risen and the tops have turned golden, then all thats left serve up and eat! Last time i added cream, jam & strawberries but while i had already added the fruit to my scones i decided to leave them plain!
